You love places like Semilla because it should be bad. It leans modern, it’s full of incredibly stylish people, it’s in the heart of Saint Germain, etc etc. but neverthelesss…

The cooking is sharp, seasonal, and occasionally a little dangerous. A piece of fish barely tamed by the pan, a pork chop that still haunts me like a Parisian ex; vegetables treated like royalty, charred and kissed with acid; sauces that don’t whisper but swear, beautifully. There’s restraint, sure, but it’s the kind that comes from a chef who’s been to war with his ingredients and won.
